Collard greens are a member of the same group of plants that includes kale, turnips, and mustard greens. They are often prepared interchangeably or in the same ways and with similar ingredients. Collards do well in dishes that require low, slow cooking such as simmering, braising, or steaming, with ham, beans, and okra.
